Quillota is the capital and largest city in Quillota Province, Valparaíso Region, Chile. It covers 302 sq km (117 sq mi) and has a population of 76,000 people (2012 estimate).

When Diego de Almagro arrived in the area in 1536, it was inhabited by the Incas. Although the valley was beautiful and fertile, it did not interest the Spanish conquistador, as he was only interested in gold. Finding none, he returned to Peru. Then in 1540, Pedro de Valdivia arrived. He was given the title of Governor of Chile.

Quillota was established some time in the 16th century. In 1585, the settlement was declared a corregimiento (roughly, village). It was the main town between Illapel and Casablanca. It was given city status on 11 November, 1717, on the feast day of St Martin, and was originally called "Village of San Martin de la Concha of Quillota". The city has the motto of "Ciudad creada con cariño", meaning "city created with care".
